Chicken Fricassee

Ingredients
5 baby potatoes, halved
1 teaspoon of olive oil
1 medium chicken breast (130g / 4 ½ oz.), diced
1 small onion, chopped
2 medium carrots, peeled and chopped
1 clove of garlic, peeled and thinly sliced
½ chicken stock cube dissolved in 100ml / 3 ½ fl. oz. water
1 teaspoon of ground dried tarragon
90g / 3 oz. green beans, halved
75g / 2 ½ oz. of low-fat fromage fraise

Chicken Fricassee Directions
- 1. Parboil the baby potatoes in a saucepan of water for 5 minutes.
2. Heat the oil in a saucepan and add the chicken pieces. Cook the chicken until lightly browned
on all sides.
3. Add the onion, carrots, garlic, baby potatoes, stock and tarragon and bring to the boil.
4. Reduce to a medium heat, cover and simmer for 15 minutes. Add the green beans and
simmer for a further 5 minutes.
5. Remove from the heat and stir in the fromage fraise.
6. Season with black pepper to serve.
