Ingredients

250g pasta shells
2 tablespoons of vegetable oil
1 small onion, chopped
1 garlic clove, crushed.
150g cherry tomatoes cut in half
2 red peppers cored, deseeded and cubed.
15g butter
50g breadcrumbs
400g tinned tuna drained and flaked
125g Mozzarella or Gruyere cheese grated.

Tuna and pasta bake Directions

  1. 1. Cook the pasta according to packet instructions.
    2. Meanwhile heat the oil in a large frying pan. Add the chopped onion and fry gently for 3
    minutes. Add the peppers and garlic and carry on frying. Stirring a lot, for 5 minutes. Stir in the
    tomatoes and fry for 1 minute until they are soft.
    3. Melt the butter in another pan, toss in the breadcrumbs and stir until all the bread is covered
    in butter.
    4. Drain the pasta, add the pepper and tomato mix, and then the tuna. Mix together, then put in
    an oven proof dish.
    5. Sprinkle the cheese and then the breadcrumbs over the pasta and cook under medium grill for
    3-5 minutes until the cheese has melted and the breadcrumbs are golden. Dish up with
    vegetables such as broccoli, green beans or carrots.
