Spiced Lentil and Lemon Soup

Ingredients
1 Large onion, chopped
15g butter
3 teaspoons ground cumin
1 teaspoon ground coriander / coriander seeds crushed
600ml low salt vegetable stock
150g brown/green lentils
3 celery sticks
2 carrots
1 parsnip
Juice and zest of 1 lemon
Low-fat greek yogurt
Spiced Lentil and Lemon Soup Directions
1. Fry the onion in butter until translucent.
2. Add spices and cook for two minutes.
3. Add stock, lentils and vegetable and bring to the boil and then simmer for 30-40 minutes.
4. Blend in a blender.
5. Add the lemon juice and the zest.
6. Reheat again.
7. When serving, add a small spoon of the yogurt on top.
